Isomalt is a natural sugar substitute that is manufactured from beet sugar. It tastes more like sugar than any other sugar substitute.
Isomalt is a sugar alcohol, a type of polyols. Sugar alcohols occur naturally in foods such apples, pears and hedgerow fruits. It is a hybrid between a sugar molecule and an alcohol molecule (hence the name “sugar alcohol”) and our bodies do a poor job of digesting and breaking them down in the small intestine as there are no enzymes present which can do this.
It is therefore treated like fibre by our bodies and helps maintain our good bacteria. Isomalt is sugar free and suitable for diabetics (there is no effect on blood sugar). It has 60% of the sweetness of glucose but we haven't used any artificial sweeteners to counter this, just fantastic world leading natural flavours.
